Vegetarian Pita Pizza

Serves 4


Soft Whole Wheat Pita bread, 6

Mozzarella Cheese, (reg. or fat free) 8 oz

Feta cheese, 8 oz

Hot house tomato, 4

Mushroom, 4 oz

spinach, 4 oz

First, steam the spinach until it is soft. Break into small pieces for use. Then, Grate the mozzarella cheese, and break feta cheese into small crumbs. Crush or mince tomatoes. Turn the pita on its bottom. On the under side of the pita breads, spread the crushed tomatoes evenly on all pitas. Next, arrange the mozzarella cheese evenly, and equally on all of the breads. Add feta cheese, sliced mushrooms, and spinach. Add some fresh oregano and basil.

Place in oven, and bake for 15-20 minutes, or until the cheese is melted and is slightly golden.
